Slate Aviation is a shared-charter air service provider (semi-private). Occupying the former home of Neary’s, the legendary Irish pub that stood as a neighborhood institution for 57 years, The Derby Club will blend timeless New York charm with a fresh culinary vision. A thoughtful evolution of a neighborhood landmark, The Derby Club’s design will pay homage to the original space while introducing refined updates. Guests will find familiar warmth with an elevated touch, including a mural by Bird Studio depicting a historical landscape of Sutton Place and the East River, a nod to the neighborhood’s heritage.

At the helm is celebrated New York City Chef Ed Cotton (Executive Chef / Partner), who will debut a menu featuring elevated classics such as Steak Diane, The Shepherd’s Cut, a double thick lamb steak served with Neary’s Mint Jelly, Chicken Pot Pie, Broiled Black Cod, and The 57 Burger, a broiled 8 ounce prime beef, caramelized onions, green peppercorn, brie cheese, and crinkle cut french fries.

True to its legacy, the dining experience at Gallaghers Boca Raton is a balance of casual formality, welcoming guests to relax and enjoy a well-rounded menu of offerings, and world-class hospitality. A graduate of Le Cordon Bleu in Miami, Milian trained under acclaimed chefs including Michelin-starred Michael Psilakis and José Andrés, whose mentorship shaped his balance of precision, creativity, and authenticity. His journeyfrom defecting from Cuba at 23 and working his way up from dishwasher to chef de cuisine to leading Caña, reflects his resilience and passion for the craft. Signature dishes like Pollo Asado, Masas de Puerco, and Vaca Frita honor the soulful flavors of his upbringing while introducing refined techniques and presentation.
